"When I first visited Ethiopia in 2011, it was to be a one-off visit. I was part of a group whose goal was to mentor the local hotel and tourism sector. I realised straight away that one visit could not satisfy my intense curiosity for this amazing country.
Nor would one visit allow me to complete the work I had begun. I suppose the impact that the place and the people had on me in that short time can be measured by the fact that I’ve been back there twice-yearly, every year since.
Over that period, I have set up a cooking school, a library for chefs, several vegetable gardens, and a cheese-making facility, as well as undertaking ongoing visits to the hotels and restaurants to monitor standards in the areas of food and hygiene. I have witnessed great improvements.
I am grateful for that first opportunity to visit a land that has given back so much to me, and I hope to continue my work there for as long as I feel I can make a difference."
